Meaning
The roadside jerk grill made from a steel drum cut lengthwise and hinged — the smoky heart of Jamaican jerk cooking. Chicken and pork are laid over pimento (allspice) wood and charcoal inside, the lid closed to smoke and slow-cook them. The jerk-pan by the roadside, lid lifting to a cloud of spiced smoke, is a national icon.
