Meaning
Allspice — the dried berry of the pimento tree, and the single most important spice in Jamaican cooking. Its warm, clove-nutmeg-cinnamon flavour is the soul of jerk (jerk is traditionally smoked over pimento wood), and it seasons stews, soups, and drinks. Jamaica is the world's leading source, and pimento is a proud national crop.
