Meaning
Spring onion — usually called 'escallion' in Jamaica. It is one of the base seasonings that flavour nearly every savoury Jamaican dish, working with thyme, pimento, garlic, and scotch bonnet to build the foundation of stews, soups, rice, and meats. Bruised and thrown into the pot, escallion is indispensable to the taste of the cooking, and a bundle of it is a standard buy at the market. See the fuller entry under 'escallion' for more on this cornerstone of the Jamaican kitchen.
