Meaning
Pork rubbed with fiery jerk seasoning — scotch bonnet, pimento (allspice), thyme, scallion, and spice — then slow-smoked over pimento wood on the 'jerk pan'. The original jerk, tracing back to the Maroons who smoke-cooked wild hog in the hills, jerk pork is smoky, spicy, and rich, chopped and sold from the roadside jerk stand alongside jerk chicken.
