Meaning
Saltfish fritters — flaked salted codfish mixed into a seasoned flour batter with scallion, pepper, and onion, then dropped and fried into small crisp cakes. One of Jamaica's oldest snack foods, 'stamp and go' takes its name from the idea of quick roadside food you grab and keep moving with. They are eaten hot as a snack, breakfast, or party finger-food.
