Meaning
Sour orange — the tart, thick-skinned Seville-type orange whose sharp juice is a kitchen workhorse: used to wash and 'clean' meat and fish before cooking, to cut grease, and to flavour drinks and marinades. Not eaten sweet; prized for its acidity. Kin in the citrus family to the tangelo.
