Meaning
A dense, moist baked pudding made from grated sweet potato, coconut milk, flour, sugar, raisins, and warm spices like nutmeg and cinnamon. Traditionally baked in a dutch pot with fire on the lid as well as underneath — hence the old saying 'hell a top, hell a bottom, hallelujah in the middle' — potato pudding is a treasured Jamaican dessert, rich and heavy and deeply spiced.
