Meaning
A heavy, round cast-aluminium or cast-iron cooking pot with a close-fitting lid — the workhorse of the Jamaican kitchen, called affectionately the 'dutchie'. Its thick walls hold and spread the heat evenly, which is exactly why rice and peas, stews, and puddings come out right in it, and why a well-used dutch pot, black and seasoned with years of cooking, is a treasured thing handed down in a family.
