Meaning
Chicken seasoned, browned, and stewed down in a rich brown gravy with onion, garlic, thyme, scotch bonnet, and often a little ketchup or browning for colour — the everyday 'brown stew' method applied to chicken. A weeknight and Sunday staple, stew chicken over rice (or rice and peas) is one of the most common and comforting Jamaican dinners.
