Meaning
Ripe plantain sliced on the slant and fried until the edges caramelise to a soft, sweet, golden-brown — one of the best-loved Jamaican sides. Fry plantain goes with almost everything: ackee and saltfish, rice and peas and stew, or a plate of chicken, its sweetness setting off the savoury food. The riper and blacker the plantain skin, the sweeter the fry, and a good plate of dinner feels incomplete without it.
