Meaning
Fish or salt mackerel simmered in coconut milk that has been boiled right down ('run down') until it reduces to a thick, oily, custard-like sauce, cooked with onion, tomato, thyme, and scotch bonnet. A rich, old-time Jamaican dish, 'rundown' (or 'run-dung') is classically eaten with boiled green banana and dumpling, and the deep coconut flavour makes it a country favourite.
